There is no honest single “global safe temperature.” Different validated combinations of temperature and time can control the same hazard, and official rounding and permitted methods vary. This page therefore teaches the control system. Use your authority's current chart for the exact value.
Contamination moves by hands, droplets, boards, knives, cloths, refrigerator leaks, pests, soil, and packaging. Raw animal products are obvious sources, but produce, flour, sprouts, and ready-to-eat food can also carry hazards. The practical defense is separation: keep raw items contained and below ready-to-eat items, and clean between tasks.
Raw-to-ready workflow:
1. Clear the work area.
2. Prepare ready-to-eat items first; cover and move them away.
3. Handle raw food on a dedicated or freshly cleaned surface.
4. Wash hands with soap and running water as locally advised.
5. Wash, then sanitize food-contact surfaces with an approved product.
6. Use a clean plate and utensils for the cooked food.
7. Launder or replace contaminated cloths; do not spread drips.
Never return cooked food to the plate that held it raw.
Do not wash raw poultry. Splashing can move contaminated droplets onto the sink, tap, nearby produce, and clothing; proper cooking is the control step. Also, gloves are not magic. A gloved hand that touches raw food, a phone, and salad has created the same route as a bare hand.
Many harmful organisms grow quickly in a middle temperature range, but the exact boundaries and allowed cumulative time differ across official systems. Cold storage slows growth; it does not sterilize food. My position is simple: if safety depends on temperature, “it still felt cool” is not a measurement. Use a thermometer and a clock. At a buffet or picnic, keep batches small, replenish with fresh controlled food, and do not pour a new batch onto an old one because that erases its time history.
Color, firmness, clear juices, bubbling, and cooking time are unreliable safety tests. Use a food thermometer suitable for the food and range. Place the sensing area in the coldest likely part, usually the thickest portion, away from bone, pan, and large pockets of fat. Thin food may require side insertion. Check more than one location in irregular or large items.
Measurement routine:
1. Check the thermometer is clean, intact, and suitable.
2. Insert its sensing area into the correct part of the food.
3. Wait for a stable reading.
4. Check a second location when thickness or shape varies.
5. Compare with the CURRENT official rule for that exact food/process.
6. Clean and sanitize the probe between foods as directed.
7. Record the value when the setting requires records.
Never let the probe tip measure the hot pan instead of the food.
Verify accuracy on a schedule and after drops, extreme temperature exposure, or suspicious readings. Ice-point and boiling-point checks require the correct method; boiling point changes with altitude and conditions. Follow the thermometer maker and your local authority for calibration or adjustment. Replace a damaged or non-adjustable unit that fails its allowed tolerance.
A refrigerator needs a verified operating temperature, airflow, and clean separation. Do not pack it so tightly that cold air cannot circulate. Keep ready-to-eat food protected above raw food, with the highest-risk raw items contained according to local guidance. Label prepared food with identity and relevant dates so nobody has to reconstruct its age from memory.

A date label does not make mishandled food safe. It only preserves history. Likewise, freezing pauses most microbial growth but does not reliably kill every pathogen and does not reverse earlier abuse. If you cannot tell when a perishable item was prepared or whether it stayed under required control, the conservative action is to discard it.
A large frozen food can remain icy in the center while its surface warms enough for growth. That is why the counter is a poor thawing method. Use a method accepted by your local authority: controlled refrigeration, cold running water under specified conditions, a microwave followed by immediate cooking, or direct cooking from frozen when the product and process allow it.

Do not refreeze by reflex. Whether thawed food may be safely refrozen depends on how it thawed, how long it was held, whether it was cooked, and your authority's rules. Quality may decline even when safety conditions were maintained. Preserve the time-and-temperature history and check the applicable guidance.
Priority allergens and labeling laws differ by country. An allergic reaction can be triggered by a small amount, and heat does not reliably make an allergen safe. Cross-contact happens through shared oil, grills, toasters, utensils, cloths, storage bins, scoops, hands, and ingredient substitutions. “I picked the nuts off” is not an allergen-control method.
When someone declares an allergy:
1. Ask what must be avoided; do not diagnose severity.
2. Check every current package label and recipe.
3. Check substitutions, garnishes, sauces, oils, and shared equipment.
4. Wash hands; use cleaned and verified equipment and surfaces.
5. Keep ingredients and finished food protected from cross-contact.

7. If safety cannot be assured, say so and do not serve it as safe.
Never promise “allergen-free” from memory alone.
A preference and an allergy require different risk communication. Do not decide that a previous mild reaction means the next one will be mild. For packaged food, preserve the label and lot information. For a food business, follow the allergen plan, training, labeling law, and emergency procedure required locally.
Pregnant people, infants and young children, older adults, and people with weakened immune systems or certain conditions can face more severe outcomes from foodborne illness. The exact foods to avoid and controls to use vary by authority and personal clinical circumstances. Follow current official advice for the relevant group, and ask a qualified healthcare professional about individual restrictions.

Appliance insulation, starting temperature, room conditions, food load, and door openings all matter. A clock plus measured temperatures is stronger evidence than touching a package. Frozen food that still has ice crystals may be treated differently from fully thawed food under local rules. Refrigerated perishables have their own limits. Grouping every item under one number is unsafe. Sort by food type and actual evidence, then apply the current authority's outage chart.
Leftovers need a complete chain: prompt portioning, approved cooling, cold storage, a clear date, protection from contamination, and reheating that follows the exact local rule for that food and use. Reheating is not a reset button for food that cooled too slowly or sat out too long. Some hazards or toxins are not repaired by making the dish hot again.
